XXL Burger Bread

Ingredients
1kg Flour
25g Salt
50g Sugar
60g Margarine
600ml Cold Water
11g MASTERPAN 3IN1 Yeast

Introduction

MASTERPAN 3IN1 the unique combination of Instant Dry Yeast & Bread Improver delivers an outstanding result of 105 g XXL Hamburger Breads.

Method

Add flour, salt, cold water and MASTERPAN 2IN1 to the kneading machine. Kneading time: about 7 minutes at a temperature of 24-26°CAdd flour, salt, sugar, margarine, cold water and Masterpan 3in1 to the kneading machine.
Kneading time: about 7 minutes – 2 minutes at the low speed, 5 minutes at the high speed at a temperature of 24-26°C
Leavening in mass for 80 minutes at 40°C with Humidity 70%
Portioning form dough weighing 115 gr.
Put the dough in the oven after it has doubled its volume, for 12 minutes.
Bake:
Upper heat 230°C
Lower heat 195°C
